Signature Brew Releases Anthology Imperial Stout

East London’s Signature Brew has announced a new arrival for the cold, dark evenings of late autumn, in the form of a limited-edition imperial stout.
The Leyton-based brewery’s new beer, Anthology, is the most personal creation yet for head brewer Riina Lääts, who joined Signature a year ago after leaving Estonia’s Sori Brewing.
The stout comes in at 10% abv and contains six different malts, lashings of Chinook hops and cacao nibs. The resulting flavour profile displays bittersweet chocolate, liquorice and dark stone fruit, with a long and bitter finish.
‘As the nights have started drawing in and we begin to head to the cosiest pubs possible it seemed a deep, velvety imperial stout was the only option!’ said Lääts.
‘The style also lends itself to being regularly reworked for each annual edition and the scope for twisted spin-offs is endless. All of the guys here are already pitching their ideas for next years’ version, so watch this space.’
The brand new brew will be available next week in 440ml cans – featuring artwork by Simon McCoy – and 20l keykegs.
And those spin-offs mentioned by Lääts have already started to take shape, as some of this years’ batch has been reserved for barrel-ageing.
Signature Brew was set up by cousins Sam McGregor and Tom Bott, who were tired of drinking mediocre beer in music venues. It has been ‘brewing with music since 2011’ and has many artist collaborations in its music-inspired range.
‘2017 has been a good year for new beers coming out of our Leyton home and Anthology is the pinnacle of our brewing expression. Everyone in the team has excitedly observed the beers development and we now can’t wait to share it with the world,’ said Bott.
