Recently recognised as a 5-star winery by James Halliday, we are proud to have collected over 700 prestigious national and international wine awards since opening in 2000.
For most of us, letting a wine ‘Open Up’ means allowing it to breathe and release its often complex flavours and aroma. Since quality wines begin on the vine, Sirromet attributes the flavour and quality of our wines to the exceptional fruit grown in our Granite Belt vineyards. With 100 hectares under vine, Sirrromet’s vineyards are located in the high altitude of Queensland’s renown Granite Belt region.
Situated at picturesque Mount Cotton, just a short drive from Brisbane and the Gold Coast, Sirromet’s state of the art facilities offer food and wine lovers the ultimate winery experience - combining production, cellar door and 5 star restaurant, alive with unique architecture and breathtaking scenery. History
While on a visit to Victoria, Queensland entrepreneur and businessman, Terry Morris attended a dinner party with some of his friends. Terry mentioned that he had tried a great wine from Queensland’s Granite Belt to which his Victorian friends laughed and said “There’s no such thing as a great wine from Queensland.” This was the spark that Terry needed to create his vision for Sirromet.
Terry chose land in the Granite Belt Region renowned for its unique combination of rich soil, high altitude and cool climate, providing the perfect location for growing grapes. Utilising both traditional methods and new technology, Sirromet produces exquisite quality wines recognised on the world stage.
Our Vineyards
Since quality wines begin on the vine, Sirromet attributes the flavour and quality of our wines to the exceptional fruit grown in our Granite Belt vineyards. With 100 hectares under vine, Sirrromet’s vineyards are located in the high altitude of Queensland’s renown Granite Belt region. Situated 600-1500 metres above sea level and approximately three hours drive south west of Brisbane, “The Granite Belt is one of the most exciting wine destinations in the country” Max Allen, The Weekend Australian.
The area is unique in Australia for its combination of high altitude, cool weather and decomposed granite soils and is known for varietals including Chardonnay, Cabernet Sauvignon, Shiraz and Merlot however in recent times have enjoyed success with different, lesser known varietals including Viognier.

Nose: Roses, cherries, raspberries and lifted citrus touches
Palate: A refreshing, young clean pretty style, soft integrated red berry fruits, candied bon bons, and other confectionary tones with balanced sweetness, and tiny beads
Winemaking Comments: Colour, and red berry fruits are the brief, clean, soft delicate style, with balance in sweetness, fruit intensity and also the bead. A multi style blend to give uniqueness and prettiness in the final blends.

2013 In Cahoots Pinot Noir Petit Verdot
These wines have been hand-crafted by Sirromet’s award winning Winemaker Adam Chapman “in cahoots” with some of his great mates, bringing together signature varietals from different wine regions to produce four inspired blends that really are much more than the sum of their parts.
Regions: Tasmania and Granite Belt
Colour: Cherry, touches of violets on the edge
Nose: Classic beetroot, tomato, farmyard tones from the Pinot Noir, and a touch of Swiss liquorice using Petit Verdot.
Palate: Classic dark cherry and rhubarb characters from Tasmanian Pinot Noir are beautifully accentuated by rich chocolate berry notes from our Granite Belt Petit Verdot. The result is an elegant, medium bodied wine with excellent integration of fruit intensity and structure.

Private Collection 2011 Late Harvest Pinot Gris
Winemaker Notes: We only produce the Late Harvest Pinot Gris when the growing season conditions allow us dry, sunny days and cool, dry nights. Made in the typical fresh, crisp French Alsatian style, this wine has nicely balanced natural sugars and long term ageing potential. The grapes are picked at 14.2 Baumé. Fermentation is carried out in stainless steel tanks and stopped when acidity, alcohol and sugar are perfectly synchronised.
Palate: A light to medium bodied late harvest sweet white wine, rich cold tea with apricots, honeydew melon with great fine acidity giving length to delicate texture on the palate.
Nose: Fresh honey, touches of marmalade, citrus or cumquat oils.

Brisbane Roar 2007 Chardonnay Pinot Noir - Limited Edition
To celebrate the excellence of the the Brisbane Roar team in 2014, Sirromet’s founder and owner Terry Morris agreed to release his internationally awarded, 2007 Signature Collection Sparkling Chardonnay Pinot Noir from his museum collection of Sirromet’s best wines. The 2007 vintage has won awards in France, Austria, United States of America and the United Kingdom.
The Signature Collection Sparkling Chardonnay Pinot Noir is made in line with the old traditional method for making French champagne, this release has been maturing since 2007, creating the tight pearl like beads and balanced toasty characteristics of any refined champagne.
Signature Collection 2011 Sparkling Red
Winemaker Notes: A unique style, using Petit Verdot works well in sparkling red styles, but to the tannins, the bright vivid colours and the hardiness of the skins. A good grape variety to use for sparkling reds, balance is the key and Petit Verdot has those balanced requirements.
Palate: A juicy, fruit driven, dark rich intense sparkling red, well balanced, pretty, soft, and showing forest red berry fruit, rhubarb, lite yet textured creaminess, and with a tight bead.
Nose: Fresh berries, mocha, lifted candied red fruits

Le Sauvage 2010 Shiraz Viognier
Variety: Shiraz and Viognier

Colour: Deep Ruby Red, with violet edges

Nose: Rhubarb, cloves, hints of vanilla and forest floor fruits, lovely balanced underlying oak, very perfumed and stylish
Palate: Rich elegant Shiraz with great touches of Viognier, chocolate and berries fused to create a wonderful sensual Shiraz Viognier. Striking touches of orange/apricot notes from the Viognier sitting thru the Shiraz, bold, yet together very soft and integrated with superior French oak influence.
Winemaking Comments: This wine style is created thru the experience of understanding our vineyards native flora over time. Utilising specific block of Shiraz to create a feminate style elegant Shiraz with touches of Viognier in a seamless manner seems to have paid off.
