Description
White By Basilio Berisa is made from two different varietals that make a great blend. From one side we have Sauvignon Blanc, it is a grape that has a short vegetative cycle with an early ripening season, and in the other hand we have White Grenache that is a local varietal very well adapted with a later ripening season. The harvest of both varietals is done during night to prevent oxidation and harvesting at the lowest temperature as possible. After short skin maceration, the grapes are pressed in a pneumatic press, after racking. Clean juice ferment very slow and cold for both varietals in different stainless steel tanks. Once the fermentation is done we stir the lees 3 times a week for 3 months before careful blending and bottling

Trying to bring only the best of each vintage to the costumer. As a proffesional winemaker and vineyard manager, I created this project aside of my job, just to make a limited productions, focusing in top quality wines. For the produccion only take the best quality grapes, not every year we can make all the wines. But the results are allways awesome.
