The Domaine La Croix Chaptal, which was created by the Benedictine monks of Gellone Abbey, spreads over the slopes of the first foothills leading to the Larzac plateau (Terrasses du Larzac). Pebbles and gravel are the main elements of this poor and deep soil made of clay and limestone. On this naturally well drained soil, vineyards and olive groves have been growing since the Χth century. The Domaine went on thriving until the phylloxera crisis as the impressive cellar built in the nineteenth century shows. On the pediment of the latter, an engraving in the shape of the Languedoc Cross gives the estate its name and emblem. Today, the Domaine La Croix Chaptal is regaining its former prestige under the boosting influence of its present owners who raise fleshy, vigorous, fruity red terroir wines from sorted out and destemmed grapes; especially : - the Cuvée Charles obtained from a selection of the best plots of Grenache, Syrah and Carignan with a strong ageing potential; it is the most representative of the terroir. - Witiza, a high-profile Terrasses du Larzac made from Grenache, Carignan, Mourvèdre and Syrah, and a tribute to Witiza and the impulse he gave to viticulture in Languedoc and the whole of Europe. This exceptional terroir is also conveyed through a gastronomic rosé wine and its Cru Clairette du Languedoc, the oldest southern white AOC!
