Harvest : hand harvested
Vinification : first fermentation made under controlled temperatures
Maturation : a second fermentation takes place in bottles to get fine bubbles called "prise de mousse" (process to transform still wine to sparkling wine) ; long and slow riddling on apron during 20 th months minimum ; then disgorgement (expulson of the lees) and the bottle is topped up with "a liqueur d'expédition" (mixture of cane sugar and wine) which is the final and definitive touch of this dry Crémant de Bordeaux.
Vine aging : 6 years
Characteristics : a brilliant pink color . Aromas of strawberry candies. This cremant is soft, well balanced and very fresh with a good equilibrium in between the mouth and the nose .
