Description
The only Crémant de Bordeaux made with 100 °/° Grey Sauvignon grapes ; this sparkling is vinified by the traditional method.

Soil : clay and limestone
Degree : 12 °/°
Yielding : 6800 liters per hectare
Vine age : around 20 years ago
Harvest : hand harvested
Vinification : first fermentation made under controlled temperatures
Maturation : a second fermentation takes place in bottles to get fine bubbles called "prise de mousse" (process to transform still wine to sparkling wine) ; long and slow riddling on apron during 20 th months minimum ; then disgorgement (expulson of the lees) and the bottle is topped up with "a liqueur d'expédition" (mixture of cane sugar and wine) which is the final and definitive touch of this dry Crémant de Bordeaux.
Vine aging : 6 years
Characteristics : a pale and brilliant yellow straw color with a steady stream of tiny color. Aromas of acacia flovers with a hint of citrus and white peach. This cremant is soft, well balanced and very fresh with a good equilibrium in between the mouth and the nose full of jasmine.
