The ancient hamlet of San Gervasio is located in the wonderful frame of the Pisa Hills, 25 Km far from the Thyrrenian Sea, surrounded by the pristine landscape of the Tuscan countryside, dipped in an amazing woodland composed by olive trees, cypresses and maritime pines. The farm land consisting of 400 hectares, of which 22 have been grown with vineyards. The winery is property of Tommasini family since 1960 and during the years it has been changed many times until 1996, when the vines have been completely converted at the organic agriculture. The new generation vineyards (from 6.000 to 12.000 plants per hectare) are located in the surroundings of the cellar; the very particular soil of San Gervasio, composed by fossil shells, sand and clay, contribute to give the wines the special taste of our territory. The main aim of the winery is to exalt nature and its blessings, for this reason Azienda Agricola San Gervasio decide to preserve it through the organic agriculture. Another focus of the winery is to exalt its own zone, so the main production is on Sangiovese grape, very typical of the area; from this grape born Chianti DOCG, Sangervasio Rosso and A Sirio; San Gervasio offers also more international varieties such as I Renai, a pure merlot, or a Cabernet Sauvignon. The winery produces also two white wines: Sangervasio Bianco (Vermentino with a little part of Chardonnay and Sauvignon Blanc) and a pure Chardonnay; finally the sweet wine Vin Santo Recinaio DOC.
