That's to ensure our International Panel of Judges, collectively, have adequate time to properly and fully judge and select the ultimate Award winners, via a three-phase blind judging system. In the third phase of which, the finalists, now in food-friendly style Categories, are judged beside food dishes of similar palate weight.
