Description
Chenin blanc Grapes harvested early in morning to preserve flavours. Juice settled overnight and then transferred to fermentation tank, where it was inoculated with specific dry yeast. Fermented for about 21 days at temperatures between 13-14 degrees Celsius. After fermentation the wine was racked from the lees and underwent protein and cold stabilisation. Final adjustments were made and wine was filtered and ready for bottling.
Pale green-gold colour. Ripe pineapple and grapefruit fills the nose, with litchis, pear and pineapple on the pallet. A vibrant crispness of tropical fruits lingers on the finish. Enjoy with grilled fish, roast duck, chicken Yakitori, quiche or goat’s cheese. Serve at 13°C.
