Pressed from 2018 Cabernet Cortis. On the nose, strong hints of forest raspberries, on the palate honey-like tones and a long-lasting finish. Great potential for aging. From a small family winery in Dubnany, Czech Republic with a long tradition of sustainable farming. Estate grown, hand picked and hand labeled. Vinařství Spěvák's signature is the production of high quality wines.
Tasting Notes: This innovative and one of a kind rosé is prepared by collecting the first press from Cabernet Cortis. Off-dry wine, high alcohol, medium acid, full bodied.
On the Nose and Palate: Surprises with beautiful aromas of ripe forest raspberries, strawberries and honeysuckle. Evolving honey-like flavors carry into a long finish. The glass is reminiscent of Moravian meadows on a warm summer day. This is a developing refreshing wine with a strong aging potential. Limited batch size.
Varietal composition: Cabernet Cortis 100% - A new crossing of Cabernet Sauvignon and Solaris from Germany.
Food pairing: Enjoy on its own or paired with a variety of white meat or seafood dishes. For example, spice rubbed tuna, baby spinach and quinoa salad with cherry tomatoes, red onion, cucumber, olives, tzatziki dressing, crispy chickpeas, goat cheese and sriracha aioli.
Winemaking: The grapes were hand harvested in mid-October at 27 points of sugar (low yielding vines), gently de-stemmed and allowed a 6 hour maceration on skins under reductive conditions. The grapes were then gently pressed and allowed to ferment for 3 weeks under a low temperature in a stainless steel tank. This process concentrated the aromas and phenolic compounds, resulting in a very expensive wine.

Wills International was founded as a passion project in the midst of the pandemic year 2020 by husband and wife Deon and Veronika Wills. Following a historic visit of Veronika's parents to Cape Cod, her father prepared the first Moravian trio of exquisite novel wines curated to the American palate. Many sleepless nights later, Deon and Veronika decided that the time had come to introduce novel Czech wines to America.
