Description
A blend of eight distinct batches individually drawn from various locations within our single block of Shiraz. Hand-harvested over four days, hand-sorted then either destemmed or crushed selectively. Post-destemming, stalks were included into select fermentations for extra aromatic lift and a sweep of tannin to the finish on the palate. Vats were allowed to remain in contact with the skins for up to three weeks after fermentation and prior to pressing.
14 months in a mix of 500-litre puncheons, 300-litre hogsheads and 225-litre barriques sourced from the Tonnellerie Mercurey, Taransaud, Saint Martin and François Freres cooperages.
This Syrah builds on the groundwork of the Levantine Hill Syrah but with its own inimitable characteristics of a unique site and its inherent signature expression. It features a brooding nose of allspice, musk, red currant, sarsparilla, stalk and tarry oak. The refined sensual palate features fine tannins married with the supple fruit carriage across the palate. Red berry and dark chocolate flavours abound, via a delicate balance of subtle acidity and assertive integrated tannins.
