Alma Austral Barrel Series Cabernet Sauvignon
Vineyard: Tupungato, Valle de Uco, Mendoza. 1000 mts above sea level. High trellis conduction.
Soil: Clay and sand in the surface with stones at 1mt.
Irrigation: drip irrigation.
Varietal: 100% Cabernet Sauvignon.
Harvest: Handpicked in bins of 250 Kg.
Winemaking: clusters are pre-selected before destemmed and crushing. Cold maceration 5 days. Fermentation with indigenous yeast at 24°C – 27°C during 18 days. Post fermentative maceration 10 days in concrete vat.
Malolactic fermentation: 100%
Aging: 12 months in French oak barrel of 225 and 500lts.
