Alcoholic fermentation between 27°to 29°, to obtain better color and structure. It is completed and complemented with malolactic fermentation. The wine then goes for 16 months in French barrels of 1st use.

Fermentation temperatures between 14°C and 15°C. Once the blend is made, the wine is gently clarified and stabilized in cool temperatures if necessary.

Cold, pre-fermented maceration for 5 days, Alcoholic fermentation between 27°C and 29°C to obtain a better color and structure. Complete malolactic fermentation.
