A very elegant Pinot perfectly balanced between fruit, tannins and acidity with a fantastic back bone. Showing off with an abundance of Maraschino and Morello cherries, red berries and subtle undertones of Mediterranean herbs, earthiness and spice. Like a walk in a forest after rain - savoury, vibrant and alluring with ripe tannins, fine acidity and minerality. Hans wants you to enjoy the smallproduction of this truly handcrafted Pinot Noir at its full potential and like with a “Grand Cru’ Burgundy this means an additional few years of bottle ageing. We have done this in our winery under perfect condition without the heavy price tag that normally would come with it. This Pinot Noir is now ready to be enjoyed but will age beautifully over the next decade.
Winemaking
The grapes were given a few days of cold-soak before the natural yeast initiation of the ferment. The wine spent 18 days on skins before being pressed & transferred into French barriques (30% new) for malolactic fermentation and further aging for 30 months. Unfined & unfiltered to maintain the great flavours. Natural sediment may show.
