WINE
The two wines, Negroamaro and Primitivo, are vinified separately with a maceration that lasts 10-12 days in 45 quintals in steel tanks at a controlled temperature of 25 ° C, with frequent pumping over in order to extract the aromatic and coloring substances and at the same time soften the tannic mass.

AGING
After a few months in steel tanks the wine is assembled. Before bottling, the wine is filtered, but not cold-stabilized, in order to safeguard its integrity. The permanence in bottle before marketing lasts 6 months, in aging rooms completely dug in the limestone rock typical of the territory in which it is born.

TASTING NOTES
Ruby red color with violet reflections, the nose is fresh fruit with clear hints of forest fruits and flowers, intense and persistent. The taste is complex and of remarkable personality and harmony. With great extractive qualities, it boasts a beautiful roundness and a splendid tannicity. It goes well with great meat and cheese dishes.

Located in Noci, a few kilometres from Alberobello, the winery is an oenological jewel carved into the limestone rock at a depth of more than 13 meters, and its production is among the excellence of regional wines.
