Tsarapi, an amber wine of distinction, hails from the Tsarapi
micro-zone (PDO) in the lush region of Kakheti. This exceptional
wine is crafted from Rkatsiteli grapes, each vine matured over
thirty years, embodying the fusion of time and terroir. In the
winemaking process, these
grapes are placed in ancient Qvevri, where they ferment with all their components, undergoing a malolactic transformation that imbues the wine with a complex, harmonious character.
After fermenting, the wine is aged in sealed Qvevri for 6-8 months, during which it develops a deep, captivating amber color. This winemaking method, revered and recognized by UNESCO, is not just a process but a celebration of Georgia's rich enological heritage, a testament to the timeless art of winemaking that continues to thrive in this region.
