Description

The harvest is manual, in crates, followed by sorting before and after destemming, the grapes are always picked at optimum maturity. The winemaking is done in frustoconical wooden and stainless steel vats with gravity filling. The alcoholic fermentation and maceration last 4 weeks with temperature control. Aging is 15 months in new barrels (40% of volume) with malolactic fermentation and aging on lees for 2 months, and 12 months for barrels of 1 year (60% of volume).
