About this company

The Champagne Gallimard was founded in 1930, the date when the first bottles of Champagne Gallimard were sold. But the family was into the history of vine and wine, since a long time in Les Riceys, we found the trace of Gallimard around 1880, date when JULES Gallimard start to grow our vineyard and made the first wine. At this step of the story it was only still wine, red, rosé and sometimes white. After that, ERNEST Gallimard continued to develop the vineyard and also the production of wine. When his son PIERRE came to the family winery they started to make their first bottles of Champagne when the AOC of CHAMPAGNE was created. Jean Gallimard then Didier Gallimard built together a dynamic estate and became famous for their Champagne in France and all around the World with medal during wine challenge. They created new cellar to continue to increase the production but in the time keep the traditional method. Now Didier and Arnaud are the actual winemaker and vine grower. They still continue to increase the surface of vines and develop the international market and test no new way to make wine as ageing in Amphora of terracotta. The vineyard is situated in the department of Aube in the south of Champagne. We call our region “La Cote des Bar” in the Village of Les Riceys. The origin of this village is very ancient and seems to date from time Gallo-Roman at the same time as the cultivation of the vine. Its history has not always been easy. The Riceys date from Roman where the Boii (Gallic people) are settled in a part of the Valley watered by the river of The Laignes, where they created the foundations of three towns called later «Les Riceys». Les Riceys is a real famous place for different reason: -The Biggest vineyard of all the Champagne area with 866 hectares of vine -Only village where 3 AOC (Appellation) are produced. Champagne, Coteaux-Champenois and the king of Rosé: The Rosé Des Riceys. -An historical place close to Burgundy north. (The reason why our still wine of Les Riceys are so famous. -3 Church for one village. Actually, we are growing a 13 hectares vineyard: A specific and unique terroir bringing an exceptional maturity to our pinots noir and Chardonnay. The soil: the soil is composed of Kimméridgien step from the Valley of Laignes but also with some different valley around. At the top of the slop there is limestone type from Portlandien. The kimméridgien is from different step of Marne of Limestone separated by other step of limestone with a depth of 90 to 100 cm. The vine: The vineyard is composed of 85 % of Pinot Noir and 15 % of Chardonnay. The Pinot Meunier is not adapt to our terroir. The pruning styles we’re using are Chablis for the Chardonnay, Guyot for the Pinot Noir. We grow the vineyard in the environmental protection by a reasoned vine growing. Now the weedkiller is made by plow to stop using of chemical product to a better respect of our terroir and the environment. All the vine of Gallimard are on the village of Les Riceys, and situated on the best sun exposure that mean south exposure in the best slop to get the best maturity of the grapes. Of course all the grapes are cut by hand. Winemaking and our Cellar: The winery: All the wines are made into our place. The pinot noir and the chardonnay are separated from the harvest to the bottling. We‘re still using the traditional method with the alliance of the modern technique. All the temperature are controlled to obtain the best complexity and result of our terroir. It also give to our wine freshness and fruity. One of the most important step during the champagnisation is the blending, each year after the winemaking of our different grapes and terroir, we taste all the wine to decide the blending. A hard work to choose the best blend as possible with the traditional reciepe of Gallimard (We can blend different grapes, different quality and also different years). But our philosophy is to make mono cépage / from 1 harvest to a btter understanding of the grapes quality and influence. The particularity of Champagne Gallimard takes place into 2 unusual type of ageing: • The first one is an ageing into oak barrel of Chardonnay to create the cuvee QUINTESSENCE • The second one is the new project of Didier and Arnaud: Since the harvest 2014, a small part of our wines are aged into new type of container with unusual material and form in the traditional winemaking in Champagne. THE OVOID JAR In these giant eggs, the wine lees are constantly raised by an internal current in form of a vortex. It gives to our wines, fine, aromatic and complexity but keeps their original purity. It also allows, to the grape varieties Chardonnay and Pinot Noir, to reveal their aromas and highlight the fruity and the mineral harmony. From a technical perspective, the wines are aged in this Jar with a capacity of 450 litters each, since the end of the fermentation they continue to get maturity and complexity. This particular winemaking takes place in 4 ovoid Jar, 2 of Chardonnay and 2 of Pinot noir. This new cuvee will complete our range of Champagne. Today our first bottles of this cuvee called "Amphoressence are already on the market with a brut nature Dosage.
