80% White and Gray Grenache, 20% Macabeu. Production of 25HL / Ha. Soils clay-limestone.

Vinification & ageing
Direct pressing, followed by traditional thermo-regulated fermentation.
Aging in vats on fine lees for 3 months. Passage of 25% of the vat in 500L oak barrels for 2 months for fat and length. Early bottling to keep the freshness of the fruit.

- Beautiful light gold dress
- Floral nose with notes of almond and fennel
- Attack on the palate with mineral notes and honey, greasy and fresh wine on citrus hints. A good length for this white gastronomy.
Food & Wine pairings
- It will be ideal on grilled fish, will find wonderful agreements with shells St Jacques, smoked salmon, scrambled eggs and all fish in sauce.

About this company
The family estate since 1913, stretches between Perpignan and Collioure at the foot of the Pyrenees, natural border with Spain. The Sol-Payré family has been operating this estate for 5 generations, today Jean-Claude transmits his passion and know-how to his children. Our particularity, 2 terroirs: - One in the South, the cradle of our Estate in Elne, in the Aspres sector on a clay-limestone soil that covers about forty hectares. - The other north of the department, in the valley of Agly, a vineyard of 7 hectares located on hillsides at 300 m altitude on rock soils: Granits, Schistes, Gneiss. These soils, the grape varieties: Syrah, Grenache, Carignan and Mourvèdre, our exceptional dry and hot climate give us warm, very aromatic wines with a nice freshness and well balanced.
