About our wine making: 

At Don Juan José we make signature wines, rescuing artisanal methods that allow us to offer a more natural and healthy product. The wines are made in clay and clay jars of 300 to 500 liters where they remain for periods of between 12 to 20 months, which gives them great complexity in a natural way.

Our process:

  • Naturally fermented (without adding yeast) in clay jars and amphorae.
  • The grapes come from old, low-yield vines, few grapes but with an excellent concentration of tannins.
  • Harvest and manual selection.
  • No added sugars.
  • No adjustments for acidity.
  • No additives for color, mouthfeel, minerality, etc.
  • No external flavor additives.
  • Minimal clarification and filtration.
  • Vegan Friendly: We do not use inputs of animal origin to clarify.
  • No heavy handling such as micro-oxygenation, reverse osmosis, rotating cone, or cryoextraction.
  • Do not sulfites during processing.
  • Minimum of sulfites during bottling.

Tinajas del Monte Pinot Noir:

  • D. O .: Casablanca, Chile
  • Harvest: Manual
  • Vineyard: 35+ years old on hillside
  • Elaboration: Natural Red Wine fermented in amphorae, made through manual processes.
  • Filtering: Minimal
  • Aging: 12 months in jars handcrafted.
  • Production: 11,321 750ml bottles and 120 Magnum 1.5LT bottles.
  • Recommended Aging: up to 6 years at 16ºC.
  • Service: Drink at 13ºC.
