Description

Inspired by the rolling hills of the Central Ranges near Orange, “Rolling” wines are sourced from the sub-600m elevations of our single estate grown vineyard where cool temperatures coupled with bright sunlight produce fruit of incredible colour and vibrant flavours. Our Rolling wines are easy drinking as a stand-alone aperitif or a great companion with food. The label iconography sees our heroine Beatrice and her faithful dog Cirro exploring the rolling hills of the single estate vineyard throughout the distinct cool climate seasons.

2016 ROLLING CABERNET MERLOT

BLEND: 91% Cabernet Sauvignon, 9% Merlot

REGION: Central Ranges, NSW

HARVEST: Early March 2016.

WINEMAKING: Fruit crushed with open rollers and inoculated directly within 6-12hrs. Temperature controlled at 24-28C, with minimum 2 pump overs per day whilst fermenting. Fruit pressed off skins before becoming dry (low baume), onto oak (mainly French) for minimum of 6 months. Wine is racked and returned during oak maturation, allowing a small bit of air to freshen the wine, and allow it to soften. After oak maturation, wine is blended, fined and ready for filtration prior to bottling

WINEMAKER: Debbie Lauritz B Ag. Sci. (Oen)

APPEARANCE: Deep red with purple edges.

AROMA: Rich red berry notes, ripe plums and cherries, slight toasty oak notes on the finish.

PALATE: Medium bodied wine, rich ripe fruit characteristics. Subtle vanillin and choc oak flavours in the mid/end of the palate. Firm, long tannin finish, giving generous fruit/oak length.

CELLAR: 4-8 years.

SERVE WITH: Braised lamb shanks, roast rack of lamb, charred barbecued beef, slow roasted beef stew, spaghetti bolognese or lasagne.
