Location: Paraje Altamira, San Carlos, Valle de Uco, Mendoza.
Terroir: Paraje Altamira at 1.100 meters above sea level, sandy soil on large limestone blocks.
ENOLOGY
Harvest in the first week of April.
Manual harvesting.
Fermentation at low temperature (24°-26°C) with manual movements the first weeks. Dry ice treatment to later fermentation and increase maceration
Pneumatic pressing at low pressure.
Malolactic fermentation (MLF) in used in italian amphoras
