ABOUT THE PRODUCER

Pisco Huamaní is a family owned distillery since 1890. Their Hacienda is located at KM 245 Panamerican Sur Highway, Paracas District in Pisco, Peru. On their farm they grow several varieties of grapes (quebranta, italia, torontel) to produce their pisco but they also grow grapefruit, oranges, tangerines as well. This combination of crops with the soft ocean breeze gives these grapes their unique aroma and taste. Additionally, the producers of Huamaní pisco are focused on quality and sort their grapes to use only the finest, cleanest fruit and even de-stem clusters prior to pressing. This is a way to reduce any sense of harsh aromatics in the final product

PRODUCTION PROCESS

The Peruvian Government regulates the production process with strict controls on what can count as Pisco. No water can be added for diluting the alcohol levels. No sugars can be added to increase alcohol levels or flavor. No additives of any kind are allowed. Then after distillation is complete, the pisco must be held at least 3 months to allow for full flavor development and composition of the beverage. Huamaní ages their pisco for 10 months. To preserve the authentic of the product, the aging must occur in a vessel that doesn’t impact flavor, typically steel or glass, but never wood. Huamaní only uses glass. The result is a beautiful full-bodied spirit, with floral notes like jasmine and rose, tropical fruits and subtle vegetal flavors which makes it a very unique and versatile product.
