Sauvage's Sparkling Wine line Comsi Comsa is made with upstate New York Apples sourced from local farms. Similar to great grapes, these apples are grown on trees in ideal soil. Using fresh water, carefully selected apples, and a French technique the result is a hard cider reminiscent of a fine sparkling wine with a 12% ABV.

On November 10, 2018, Sauvage was a participant at the Toast of Brooklyn, a one-of-a-kind wine, food, and spirits festival celebrating Brooklyn's unique cultural diversity. The models poured samples of Comsi Comsa Oak Aged and Apple Dry. The reception was warm, and guests were delighted with the flavors of Sauvage. The star of the show was Oak Aged which reminded guests of Brandy.

           

Sauvage has brought innovation to the kosher wine market. Sauvage was exhibited at KosherFest the world's largest and most attended kosher-certified products trade show. KosherFest exhibits new Kosher products from the United States and all over the world. Attendees were treated to the entire Comsi Comsa Line including Apple Crisp, Apple Dry, Oak Aged and two brand new products: Apple Ripe and a revolutionary vodka made from apples. All products were received well and earned phenomenal feedback. It was a successful event which exposed Sauvage to a national and international audience.

              

Sauvage's brand new winery and distillery is nestled in Oneonta, a vibrant small town in Upstate New York at the foothills of the Catskills Mountains. With direct access to varieties of delicious apples growing in nearby orchards that produce a local, fresh, crisp juice, Sauvage then ferments the juice together with yeast. The result is an apple sparkling wine. Sauvage also plans other apple-based products that will further innovate the Kosher market.
