Description
We handpick the plums at full maturity, when the concentration of fruit sugar is the highest. Each plum is washed, cleaned of stones and stalks and only then placed in fermentation vessels. The fermentation process itself is monitored daily to prevent the hook from boiling over. At the right time, the hook is placed in the cauldron and at a certain temperature, the process of distillation of brandy begins. When distillate or brandy leaks, that first brandy, the so-called the first, we remove, as well as the last, the so-called. molasses. It is very difficult to determine where the beginning is and where the end of the heart of the distillate, but the quality of brandy itself depends on that. For us, it is very important to remove everything that is harmful to human health. Then we redistill. Each brandy that is produced has no color and strength is about 75% alcohol. When, after a couple of months, we bring the level of alcohol to the desired limit, we put the brandy in the oak barrels, in order to get the color and improve its smell and taste. Before bottling, we filter each brandy and only then bottle it.

Brandy is produced from the highest quality varieties of fruit from its own production, as well as by purchase from proven producers. It undergoes all the necessary analyzes in one of the external laboratories before being sold to the buyer. In order to harmonize our business with legal regulations, market requirements and competition, we have developed and documented the HACCP system, which is in line with the legislation that defines the area of food safety. We want to expand production and in the near future to produce different types of fruit brandies as well as bottling and labeling. We always try to make our brandies different from others in terms of quality and as such to be competitive in the market.
