The U.S. shelves are crowded with the establishment of more than 2,500 new distilleries in the last 15 years, all telling the same story: local grain, local water, craft pride, and traditional aging. Yet despite the noise, real gaps remain in the flavor spectrum of whiskey, gin, and vodka. That is the space Windows Distillery was built to fill.
