After the, 100% manual, harvest the grapes go to the cantina where they are processed (removing of stems and squeezed). The grape juice goes directly in Inox container. Fermentation takes 2 weeks at a temperature of 14 to 20 degrees. After fermentation, the wine is filtered and is pumped over in a different Inox container to rest for at least 6 months before bottling.
This clear brilliant white wine is gold-yellow of colour. The perfume consists of fruit aromas and vanilla. After swirling, we notice ripe pear, yellow prunes, Golden Rennet apples, honey, acacia walnut and light floral hints. On the palate we notice a round flavour with mild acidity, light bitterness and a long finish.
This wine would fit perfectly with a pasta fruti di mare (not or lightly tomated), a Vitello tonnato or a carpaccio.
