The nebbiolo grapes are harvested in the beginning of October, followed by a 6-hour masceration process. Fermentation is done in Inox containers for 2 weeks at 18 degrees, after which the wine is pumped over into a different Inox container to rest for at least 6 months.
This clear brilliant Rosé is coral red. The first sniff reveals a lactic touch and after swirling the red fruit pops out (raspberry, strawberry, little red berries). We also note a light hint of Cavaillon melon. The palate has a dominant freshness combined with a light bitterness and red fruit.
This wine has enough strength to not only be served as aperitif, but also to be combined with dishes such as Risotto ai Funghi, Papardelle with rabbit, chicken, tomato, eggplant or grilled ratatouille with pasta.
