The fruits are harvested by night in order to stop the uncontrolled maceration due to hot temperatures. The wine is pressed directly under CO2 and follows fermentation at low temperature: 17° in order to keep all delicate aromas. The ripening objective is to develop the perfect balance between freshness, fineness and thickness. |
TASTING |
Yellow color with green glints, touches of citrus fruits: grapefruit. We can discover the fruit scents at taste, with a large aromatic persistence and very nice freshness. |

VINIFICATION & MATURING |

This type of vine is the main one of the Bordeaux region. The Cabernet Sauvignon is fragile in its culture, it is susceptible to diseases of wood (excoriose and powdery mildew) and mortality of the plants is important. It requires a long waist. |
TASTING |
Tones of red fruits, violet, and green pepper. Very fruity at first taste, once in the mouth, the tannins and volume are powerful. Can be tasted young or after several years in cellar. Perfect when served with red meats and cheese, or with toasts during aperitifs. |

Based on 35 years old Merlot vines with a natural weak return (55 hl / ha) guaranteeing the quality of the wine. The juice follows a traditional Vinifica- tion with a long soaking and fermentation at 25°c maximum in order to respect of the fruit. The ripening focuses on fruit and freshness conservation. |
TASTING |
With a deep ruby color, this wine offers a very rich and complex intensity on the nose. Elegant, with predominance of ripe red fruits and spicy scent this wine, thanks to its melted tannins can be sampled from its first years. It will be perfect with assortment of cheeses and a rib steak. |
