Cadée means “pure” in Gaelic. We start with the highest quality barrels and oaks hand selected from cooperages around the world for every whiskey we produce. Our exceptional spirits are created from centuries-old clan recipes, partnering with the best distilleries, to create unique flavor profiles. We carefully age, blend and finish each barrel in this rare island climate, creating spirits that are smooth and distinctive.
Great whiskies can only be created by using great wood. Our custom barrels impart unique flavors - and by experimenting with char and toast levels we have been able to develop balance, richness and complexity never before tasted.
Our international award-winning Cascadia Rye and Deceptivus Whiskeys are both finished in imported 20-year-old French oak Portuguese port barrels. We marry the whiskey within our barrels for additional character and flavor. This integration takes between six months and two years.
Each of our spirits has passed rigorous quality and taste tests by our entire team.
To ensure the flavor integrity of our whiskies, we never chill filter or add artificial color. Those cosmetic steps we never take.

DECEPTIVUS BOURBON WHISKEY
A MAGICAL MARRIAGE OF BOURBON AND PORT
You've never tasted anything like Cadée Deceptivus Bourbon Whiskey.
ABV: 42.5% / 85 proof
Handmade in small batches on the Isle of Whidbey, Washington.
Aging: First matured as Bourbon Whiskey in new American Oak barrels, then double barrel finished in imported, first poured, 20 year old age-soaked Port barrels imported from Portugal, this expression named itself. All barrels in Cadee vaults are carefully prepared and regularly checked for flavor. Everything about this spirit is so unique and exclusive, we knew these barrels would birth a truly great whiskey.
Nose: Round, rich and distinctly smooth bourbon aroma.
Tasting Notes: This marriage of delicious bourbon with Portuguese port produces a seminal whiskey. Very smooth with a characteristic, lingering bourbon run. The port barrel finishing influence balances out the the bourbon's presence perfectly.

CASCADIA RYE WHISKEY
THE SMOOTHEST RYE YOU'LL EVER TASTE
Cascadia Rye Whiskey gently rolls over the tongue like waves to the shore. Created at Cadee distillery in Port Clinton.
ABV: 43.5% / 87 proof
Handmade in small batches on the Isle of Whidbey, Washington.
Aging: This Rye Whiskey was first matured in new American Oak barrels, then double barrel finished in French oak casks previously used for maturing rich, 20 year old Port in Portugal. The casks were transferred to the distillery's No.I vault, the Isle of Whidbey's oldest maturation warehouse. Located at sea level on the shores of Port Clinton, the spirit was left to mature under nature's care. The young Rye developed into one of the most incredible whiskies we have produced. With an aroma rich in port, cocoa, dark cherries, toffee, chocolate and mature oak on the palate, the concentration of flavors is inimitable.
Nose: Rich and full, yet mild. Lingers in the mind.
Tasting Notes: Rich, delicately spicy and very smooth.
GIN
A THIRST FOR QUALITY
For centuries the juniper branch has been used to represent gin. A hand drawn iconic image of juniper graces our label for Cadée Gin, as well as the Isle of Whidbey Label on the rear.

Nose: Cadée Gin is exquisitely balanced.
Tasting Notes: Dry crisp and clean on the palate, lighter body with a juniper focus and citrus forward. Concentrated flavor tightly wound. Opens up dramatically when mixed.

RYE WHISKEY
SWEET COMPANY
Cadée Rye has a rich vein of peaty-smokiness, underpinned by sherry cask-aged whiskies, full of dried fruit and wine character. A classic front label design complements a hand drawn image of the Isle of Whidbey on the back.

Aging: Aged in new, charred American oak barrels for a minimum of eight months.
Nose: This Rye Whiskey is a banquet for the senses. A masterful and richly balanced spirit that embodies the best attributes of the profile.
Tasting Notes: Richly balanced with a range of spice notes, including pepper, nutmeg, clove, and cinnamon. Mint and dried apple are apparent, with undertones of oak, soft caramel and vanilla. On the palate, spice predominates counterbalanced by fresh mint, oak, vanilla and chocolate flavors.
True fans of Rye will savor this beauty. It will become an essential addition to their whiskey collection.

Cadée No. 4 is distilled four times, allowing a uniquely smooth, fresh taste. A hand drawn local iconic image of Mt. Index, near Snoqualmie in the Cascade Mountain ranges, graces our label for No. 4 as well as the Isle of Whidbey Label on the rear.

Nose: A uniquely smooth, fresh taste. Subtle, crisp and light. Full and round with a medium bodied weight.
Tasting Notes: Hint of vanilla with gentle, soft cream characteristics. A rich, velvety texture. A balance of sweet and savory with light pepper and spice.

Tasting Notes: A full, rich and balanced Bourbon with flavors of cinnamon, walnut, and allspice. Oak and vanilla undertones imparted by barrel maturtion and the elements of the Pacific Northwest. A handcrafted biscuit quality with hints of chocolate caress the palate as a certain rye spiciness adds flair to the overall taste.
With a long, spicy and satisfying finish, this whiskey is utterly delicious.
