Family wines from Chile

Bouchon´s family has been making wines for more than 120 years and four generations at their own estates located at the coastal dry lands of the Maule Valley, Chile. Maule is one of the most traditional wine regions in Chile, dating all the way back to the 17th century. It has a temperate, Mediterranean climate, with hot and dry summers and drastic temperature changes from day to night, suitable for producing highly expressive, fruity wines. Bouchon´s vineyards are planted over very old granitic soil, with high amount of minerals such as quartz, and includes centenary dry farmed vines, producing as a result differentiated and terroir-driven wines. The winery sits at the heart of Bouchon on the Mingre estate, a plain but dignified structure with adobe walls and clay floors built in the early 1900s which houses the barrels, the micro-vinification room and the wine cellar.

Las Mercedes

The Las Mercedes project belongs to us, the 4th generation of the Bouchon family

It was born out of a desire to capture a little bit of who we are in each bottle of wine that carries our label. Our family has been producing wine for more than 120 years and now our turn has come. The philosophy behind Las Mercedes is to dare to make wines with absolute freedom – to create the kind of wine we would like to drink ourselves, to share with our friends and, eventually, with the rest of the world.

We only have one rule: not to forget the Maule Valley, which is where all Bouchon wines are made. The name we chose is a fond tribute to the adventurous spirit of the first winemakers to work this valley.

Ensamblaje

Our Ensamblaje is a search for balance and complexity in the form of a well-structured wine with tannins that are firm but also smooth and round. To attain these results we select parcels and varietals from every harvest that offer a distinctive element and blend them together in just the right proportions. The wine is later aged for twelvemonths in first- or second-use French oak barrels for added complexity before being aged in the bottle until it reaches its full potential. 

Singular

Singular is a grape, a parcel, a wine. Always choosing originality over repetition, we risk it all for wines that are special and unique. We let the soil, the climate and the vines bestow each wine with singular attributes, pushing the limits of terroir expression to the max. 

Convento Viejo

Convento Viejo's wines are made with grapes specially selected of the Maule Valley. They are produced following the tradition of the old winemakers of Maule, pursuing that each bottle express the best of its variety and the terroir from which they come from.

Winery. True to our philosophy, we continue to work out of our simple adobe buildings which date back to the beginning of the 20th century. We create our wines in a natural environment, following traditional methods and consuming as little energy as possible.
